Aleppo pepper has a moderate heat level with some fruitiness and mild, cumin-like undertones. It also has a hint of saltiness and a slightly raisin-like flavor. Its widely used in middle-eastern and Mediterranean cuisine and can be used as a substitute for red pepper or paprika. Aleppo Pepper, a favorite of professional chefs, is named for the town in Northern Syria it originates from.
